As seen in the Gold Coast Bulletin’s Taste section, the Pretty Yummy Cookie Co team comprises us, mother and daughter team Christine Hall and Carley Rosengreen.
How did Pretty Yummy Cookie Co come about? Well, when out shopping for bits and bobs to make Carley’s wedding cake a couple of years back (not recommended for people lacking that self-suffering streak), we came across a book full of jaw-dropping cookies made with a simple sugar biscuit recipe and royal icing. Eighteen months later, our transformation into cookie obsessives is complete and business is booming.
Pretty Yummy Cookie Co’s Gold Coast-based kitchen had its food license approved by the GC City Council in February 2016 and we’ve been pumping out cookies and cookie-topped cakes for celebrations, events, businesses and cafes ever since.
In the short-term, we make-to-order for customers locally and nationally via a shipping service, and will soon launch our market stall and expo presence to markets and events around Southeast Queensland. But the big picture is for the Pretty Yummy Cookie Co bakery cafe to become a reality on the Gold Coast, with on-site classes, franchising and a retail line key goals for the future.
When we’re not making cookies and cakes, we’re eating out, hanging out with our pet cat, dogs and snake, and lapping up life on the GC with our friends and family.
